There is an increasing demand for different species of edible mushrooms for use in cooking. Nowadays we can find a great variety of fresh edible mushrooms , both wild mushrooms and cultivated mushrooms . But we must take into account that fresh mushrooms have a very short life

. Therefore, an increasingly used option is the use of canned mushrooms and dried or dehydrated mushrooms , since these have a shelf life that can exceed 2 years.

When to use dried or dehydrated mushrooms?

Dried or dehydrated mushrooms can be used in any dish or stew. Once rehydrated, they bring the flavor of each species of edible mushrooms to our dishes.

You can use dried or canned mushrooms in soups, rice and pasta dishes, add them directly to meat and fish stews, in casseroles, as a garnish for dishes or to dress sauces. They fit perfectly and the possibilities are endless!

How many dried mushrooms should I use?

In addition, cooking with dried mushrooms saves money compared to fresh mushrooms, since apart from being cheaper, a 10 g quantity of dried mushrooms is equivalent to 100 g of fresh mushrooms.

Cooking with mushrooms, in most cases, is more a question of adding flavor to stews than of quantity. A small portion of dehydrated mushrooms will be enough to bring their flavor to our dishes

Dehydrated mushrooms are a healthy and completely natural food. No additives or preservatives are used, only fresh, naturally dried mushrooms.

How to rehydrate dried mushrooms?

Rehydrating dried mushrooms is a very simple process, suitable for everyone. It does not matter the type of edible mushroom to rehydrate since the process is always the same and will only vary in time depending on the texture we want to achieve or the type of stew

To rehydrate dried mushrooms we can use either warm or lukewarm water, although we recommend warm water since it will accelerate the process.

To do this we will heat water in a proportion of 4 times of water for 1 of mushrooms. We will take it to boil and we will extinguish the fire. We will introduce the dehydrated mushrooms inside the container with water so that they rehydrate and infuse and we will leave them without covering.

We can also rehydrate them to the steam or adding them directly in the stews. This will depend on the type of dish we are preparing.

How long should I rehydrate the mushrooms?

The rehydration time will vary between 25 minutes and 2:00 hours. It will depend on the consistency of the edible mushrooms and fungi, whether they are firmer or softer.

After this time, strain the mushrooms and let them drain for a few minutes. You will see that the edible mushrooms have increased in size considerably. Once drained, they can be used in the same way as fresh mushrooms.

Mushrooms and mushrooms do not contain salt, so during the rehydration process, it is a good time to add the salt we want. We only have to add it and the edible mushrooms will absorb it easily.

We can also rehydrate dehydrated mushrooms with other types of liquids, to give them different textures and flavors. Thus we can use in addition to water, milk, wine, cava, liquors, ...

It is important not to discard the water or liquid resulting from the rehydration of the dehydrated mushrooms and boletus because in addition to multiple nutrients it provides an exceptional flavor to our dishes.
